Beef ribs

Texas BBQ Beef Ribs 

Ingredients:

For the rib rub
3/4 cup raw sugar, such as Sugar In The Raw
1/4 to 1/2 cup salt, depending on your tolerance for the stuff
1/4 cup paprika
2 tablespoons finely ground black pepper
1 tablespoon granulated garlic
1 tablespoon onion powder
1 tablespoon ground cumin
1 teaspoon dry mustard
1 teaspoon ground coriander
1/2 teaspoon cayenne pepper
1/2 teaspoon ground allspice
For the ribs
5 pounds beef back ribs
2 cups your favorite barbecue sauce

Directions:

For the rib rub
1. Combine all of the ingredients. Mix well and take a taste. If it needs more salt, shake some in. The rub can be stored in an airtight container for up to several weeks. Makes about 1 1/2 cups.
Prepare the ribs
2. Season the ribs liberally on both sides with some of the rib rub.
3. Prepare the grill for cooking over indirect heat at 250° F (121°C) using oak or hickory wood for flavor. Place the ribs, meaty-side up, directly on the cooking grate. Cook for 2 1/2 hours. Flip the ribs and cook for 30 more minutes.
4. Place a double layer of big sheets of heavy-duty aluminum foil next to the grill and place the ribs on it, meaty-side up. Wrap up the ribs, sealing the package tightly. Return the ribs to the grill for 1 hour.
5. Transfer the packet of ribs to a platter. Raise the temp of the grill to 400°F (204°C) . Remove the ribs from the foil and return to the cooking grate. Brush with the sauce. Cook for 15 minutes. Flip the ribs, and brush with the sauce again. Repeat once more.
6. Place the ribs on a platter and serve with additional barbecue sauce, preferably warm, on the side.

 

Chile Con Queso

Chile Con Queso

Ingredients:

1/2 onion diced (about 1/2 cup)
4 cloves of garlic minced
3 Serrano peppers diced
3 jalapeno peppers diced
2 tablespoons of butter
2 tablespoons of flour
1 cup of milk
6 cups of shredded cheese, can use any combination of Longhorn cheddar and Monterrey Jack
1/2 cup of cilantro, chopped
2 plum tomatoes, peeled and diced (about 1 cup, can use canned if tomatoes aren’t in season)
1/2 cup of sour cream
Salt to taste

Directions:

1. Melt the butter in a saucepan on medium-low heat, and then cook the onions and peppers for about five minutes or until onions are translucent.
2. Add the garlic and cook for another minute.
3. Whisk the flour into the butter, vegetable mix and cook for about 30 seconds.
4. Add the milk to the pot, and cook on medium, whisking constantly until sauce is thick, about five minutes. Stir in the cilantro and tomatoes.
5. Turn heat down to low, and a 1/4-cup at a time, slowly add the shredded cheese stirring into the white sauce until completely melted. Repeat.
6. Stir in the sour cream.
7. Add salt to taste.

Fried Okra

Deep-Fried Pickled Okra

Ingredients:

1/2 cup Yellow cornmeal
1 teaspoon Hot pepper sauce
1/2 cup milk
1 lb Pickled okra
1/2 cup White flour
2 Eggs
Peanut oil; for frying
Original recipe makes 12

Directions:

1. Drain okra.
2. Beat eggs, milk, and hot red pepper sauce together until well blended.
3. Dredge okra in flour, dip into egg mixture, and then dredge in yellow cornmeal.
4. Put breaded okra on a baking sheet.
(Recipe can be made to this point several hours ahead.)
5.In a deep-fryer or large, heavy pot, heat about 4 inches of peanut oil to 375F. Carefully lower okra into hot oil in batches.
6. Cook until golden brown, about 2 minutes.
7. Drain on paper towels and serve warm.

 

 Sweet Potato Pie

Texas Sweet Potato Pie

Ingredients:

1 1/2 cups mashed cooked sweet potatoes or one 15 oz. can of mashed sweet potatoes
3 beaten eggs
3/4 cup brown sugar
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon cloves
1/4 teaspoon nutmeg
3/4 teaspoon salt
1 2/3 cup evaporated milk (one 12 oz. can)

Directions:

1. Preheat oven to 375 degrees
2. Combine all ingredients in a mixer or blender. (A mixer will leave a few small delectable chunks of sweet potato.)
3. Pour mixture into two nine-inch pie shells (I use my Grandma’s recipe).
4. Bake 55 minutes.
5. Cool before serving. Garnish with whipped cream as desired. Makes two pies.
Uncle Richard’s note: I really enjoy it cold out of the refrigerator the next day for breakfast.

Ginger whipped cream

Ingredients:

1 cup heavy whipping cream
2 tablespoons of honey
1 teaspoon of ground ginger

Directions:

In a chilled bowl, beat all ingredients with mixer, whisk or egg beater until soft peaks form.

Mini Pecan Pies

Pecan pie

Ingredients

3 cups chopped pecans
3/4 cup sugar
3/4 cup dark corn syrup
3 large eggs, lightly beaten
2 tablespoons melted butter
1 teaspoon vanilla extract
1/8 teaspoon salt
1 1/2 (8-oz.) packages frozen tart shells
Garnish: currants

Preparation
1. Preheat oven to 350º. Bake pecans in a single layer in a shallow pan 8 to 10 minutes or until toasted and fragrant.
2. Stir together sugar and corn syrup in a medium bowl. Stir in pecans, eggs, and next 3 ingredients.
3. Spoon about 1/4 cup pecan mixture into each tart shell. Place tart shells on a large baking sheet.
4. Bake at 350º for 25 to 30 minutes or until set. Remove to wire racks, and let cool completely (about 30 minutes). Garnish with currants, if desired. Store in an airtight container for up to 3 days.

 

Chicken Fried Steak Bites

Chicken fried steak bites

Ingredients
Original recipe makes 8 servings
1 quart oil for frying
1 egg
1/4 cup milk
2 cups all-purpose flour
2 teaspoons dry mesquite flavored seasoning mix
1 teaspoon salt
1 teaspoon ground black pepper
1/2 teaspoon garlic powder
1/4 teaspoon ground cayenne pepper
2 pounds cube steak, cut into bite size pieces

Directions
Heat the oil in a deep fryer or heavy skillet to 365 degrees F (185 degrees C).
In a bowl, beat together the egg and milk. In a resealable plastic bag, mix the flour, mesquite seasoning, salt, pepper, garlic powder, and cayenne pepper. Dip the steak pieces in the egg mixture, then place in the plastic bag, seal, and shake to coat.
In the hot oil, fry the coated steak pieces in small batches until golden brown, about 5 minutes. Drain on paper towels.

 

Texas BBQ Brisket Sliders

BBQ Beef Brisket sliders

Ingredients

Serves: Makes 12 (2-slider) servings.
1 package of your favorite BBQ Rub
4 pounds beef brisket
24 slider or small dinner rolls
3/4 cup barbecue sauce
4 cups prepared coleslaw

Directions
Rub Seasoning over beef. Place beef, fat side up, in 13×9-inch foil pan. Cover with foil. Refrigerate overnight.
Prepare grill for indirect medium-low heat (275°F to 300°F). Preheat grill by turning all burners to high. Turn burner on 1 side to medium-high. Turn off burner(s) on other side. Place covered beef in pan on unlit side of grill. Close grill.
Grill 2 1/2 to 3 hours or until internal temperature of thickest part of beef is 180ºF to 185ºF. Carefully remove pan from grill.
Return beef to grill, placing it directly on unlit side. Cook 30 minutes longer or until beef forms a crust and internal temperature is 190ºF to 200ºF.
Remove beef from grill. Let stand 10 minutes. Slice brisket. Serve brisket slices on slider rolls. Top with BBQ Sauce and slaw. Serve with additional BBQ Sauce, if desired.

Cook Your Way to Mom’s Heart

Mother’s Day. The opportunity to say “thank you” to the woman who does the job of 12 and gets paid in love. We want to help you make mom’s day special. Cook your way to your mom’s heart by making her breakfast in bed or the brunch of her dreams. With a few easy tips and a little creativity, this could be the best Mother’s Day meal ever! Chef David Heyen of Thermador has some tips to help you cook this Mother’s Day.

Keep It Simple. Stick with safe and fun to eat foods like fresh diced fruit and French toast. Here’s a quick and easy French toast recipe that will take you about 20 minutes:

• In a wide, shallow bowl, whisk together the eggs, milk and vanilla and set near the stove. In a small bowl, mix together the cream cheese and preserves; set aside.

• Spread the cream cheese mixture evenly over 4 bread slices. Top with the remaining 4 bread slices to make 4 sandwich. Cut each using a 4-inch heart-shaped cookie cutter.

• Melt the butter in a large nonstick skillet over medium heat. Dip the hearts in the egg mixture and cook in the skillet, turning once with a spatula, until golden brown, about 3 minutes on each side. Serve the hearts with the warm syrup.

Maybe brunch is more to moms liking. Try a simple version of eggs benedict.

• Toast the English muffins and top with moms choice of meats.

• If poaching an egg tends to be a challenge, stick with a scramble or simple fried egg sunny side up.

• Top this with hollandaise sauce, ½ cup of mayo, ½ teaspoon of Dijon mustard, 2 teaspoons of lemon juice mixed well. Add 2 tablespoons of melted butter and WHISK!

• Season with salt and cayenne pepper and spoon onto your eggs.

Sara’s Farewell

Since 1979, Sara Staley has been an important part to Ed Kellum & son’s 65 year history of extraordinary service. After 35 years of hard work and dedication to the company, Sara is retiring. We are all very sad to see Sara go, but are highly appreciative of the work she has done throughout the years.

Can you imagine how different life would be without some of these inventions from the 80′s? Or how low prices were in 1980?

We definitely can’t. Most importantly, we can’t imagine our company without the impact Sara has made over the last 35 years.

Before joining Ed Kellum & Son, Sara graduated from Appalachian State University in North Carolina with a degree in Home Economics. She first worked in Atlanta, Georgia at a power company where she took part in kitchen design work. After living in Germany for a year with friends, she decided to move to Dallas where she began cooking classes. At these classes, appliance vendors would demonstrate how to use the latest inventions. One day, Amana had a demonstration of the newly released microwave. The Amana staff knew Mr. Kellum personally, and they were helping him find the perfect candidate to work for him. They introduced Sara to Mr. Kellum and she was hired right away.

The best part of the job for Sara was meeting customers, getting to know them and then helping them determine what products met their needs. Ed Kellum & Son is different than other retailers because “they are not just there for the sale; they genuinely care about building relationships with their customers. They want the customers to know they care, and this drives them to come back,” Sara said. “Not only do the same customers come back, but they also spread the word to their family and friends about their experience.”

One of Sara’s favorite memories while working at Ed Kellum & Son was having the opportunity to work with three generations of customers. Ed Kellum is not just a company with great brands, but it is also a family-oriented/owned company that values customer satisfaction. After working for 35 years with one company, Sara definitely made long-lasting relationships with her customers and the generations after them.

Since 1980 when Sara began, the number of products carried by the store changed drastically. Ed Kellum & Son started with few white washers, dryers, refrigerators, a cook top and oven. Now, each vendor offers hundreds of different products including popular new items like built-in coffee makers or steam ovens.

When Starpower bought Ed Kellum & Son in 2011, Sara said, “It just made a great product even greater.” With this acquisition, Starpower added live kitchens to the showroom which adds a whole new element to customer interaction.

After Sara retires, she plans on visiting family and friends across the country. When asked about other plans, Sara proclaimed she is “going to have fun!”
