BBQ Beef Sliders

BBQ Sliders

Ingredients

For the spice rub:

1/4 cup smoked sea salt (or regular salt)
1/4 cup light brown sugar
3 tablespoons paprika
1 tablespoon mustard seed
1 tablespoon garlic powder
2 teaspoons cumin
2 teaspoons ground ginger
2 teaspoons ground coriander
1 1/2 teaspoons ground red pepper or cayenne pepper

For the brisket:

1 8-pound brisket with a very thin layer of fat on top
1 red onion, grated
1/2 cup apple juice
1/2 cup lager-style beer, at room temperature
seeded sourdough rolls, split
Extra-sharp cheddar, coarsely grated (a white, extra-sharp cheddar will do)

Smoky Beef BBQ Sauce:

1 cup ketchup
2 large cloves garlic, finely chopped
2 tablespoons dark brown sugar
2 tablespoons dark amber maple syrup
2 tablespoons Worcestershire sauce
1 1/2 tablespoons cider vinegar
1/2 cup beef stock
1 teaspoon smoked paprika
Coarse black pepper

 

Directions 

  1. Combine the rub ingredients in a small bowl. Generously coat the brisket with lots of black pepper on all sides, followed by the spice rub, massaging the spices into the meat. Cover with plastic wrap and let sit overnight in the fridge.
  2. Pre-heat a smoker to around 250°F and set up for cooking over indirect heat by placing coals and wood chips to one side. Place the brisket on the other side and cook, fat side up, for 4 hours.
  3. Pull the meat off and slather with the grated onion. Using a double layer of foil, create a pouch/packet for the brisket. Add apple juice and beer and tightly seal the foil.
  4. Place back in the smoker for another 2 hours, adding a handful of chips and 12 or so coals. After 2 hours, open the lid and let the brisket sit in the packet for another hour.
  5. Combine all ingredients for RR Smoky Beef BBQ Sauce in a small saucepot and cook over a low bubble for 15-20 minutes. Reserve.
  6. To serve, thinly slice the brisket on a large cutting board. Add some RR Smoky Beef BBQ Sauce and give everything a rough chop to combine.

 

BBQ chicken and cheese stuffed grilled Jalapenos

Stuffed jalapenos

Ingredients

Large Jalapeno Peppers
1/3 cup Shredded Chicken (cook chicken breast on grill and then shredded it)
1/3 cup of diced cooked bacon
1/3 cup Shredded Cheddar Cheese (we used a “Mexican Cheese” blend)
4 Tbsp. Reduced-Fat Cream Cheese
1/3 cup Corn
1/2 Red Onion
1 Tbsp. salt
1 Tbsp. pepper
1 Tsp. minced garlic

 

Directions

  1. Cut the Jalapenos in half (length wise), removing the seeds and tops. Make sure you don’t leave any of the seeds unless you really like it HOT.
  2. Mix the shredded chicken, cheddar cheese, cream cheese, corn, and spices together to make the filling.
  3. Scoop enough of your chicken/cheese mixture to fill the jalapeno halves. Sprinkle cheddar cheese on top of each jalapeno.
  4. Carefully place them on the grill using tongs. You’ll want to let them cook for 8 – 10 minutes on medium heat or until the cheese starts to brown. Serve while they are hot. You can add a side of sour cream and/or guacamole, too.

 

Mushroom and Spinach stuffed pork tenderloin with Hawaiian glaze

Stuffed pork tenderloin

Ingredients

5 Tbs. extra-virgin olive oil
3-1/2 oz. shiitake mushrooms, stemmed and thinly sliced (1-1/2 cups)
Kosher salt and freshly ground black pepper
6 oz. baby spinach (5 lightly packed cups)
1 large pork tenderloin (about 1-1/4 lb.)
1 Tbs. lightly chopped fresh thyme leaves
1/4 cup freshly grated Parmigiano Reggiano
2 large shallots, finely diced (1/2 cup)
1 (1 lb. 4 oz.) can crushed pineapple
1/2 c. frozen concentrate orange juice, thawed
1/2 c. packed brown sugar
1 1/2 tbsp. original Worcestershire sauce

 

Directions

  1. Preheat oven to 450°F
  2. Heat 2 Tbs. of the oil in skillet. Add the mushrooms, sprinkle with 1/2 tsp. each of salt and pepper, and cook, stirring, until browned and tender, about 3 minutes.
  3. Stir in the spinach, sprinkle with salt, and cook, tossing well with tongs, until just wilted, about 2 minutes. Transfer the spinach mixture to a colander and set the skillet aside.
  4. Trim the pork of any silverskin or excess fat. Butterfly the tenderloin by making a horizontal slice lengthwise through the tenderloin almost all the way to the other side. Open the meat flat, like a book. Cover with plastic wrap, and using a meat mallet, lightly pound the pork so that it’s 1/4 inch thick. Rub the pork all over with 1 Tbs. of the oil, half of the thyme, and about 1/2 tsp. each of salt and pepper.
  5. Squeeze any excess liquid from the spinach and mushrooms. Spread over the pork, leaving bare a 2-inch border along one long edge. Sprinkle on the Parmigiano. Starting with the long side that’s covered with filling, roll the stuffed tenderloin toward the bare-border side so that it forms a cylinder, and secure it with four or five toothpicks or kitchen twine.
  6. Wipe the skillet clean if necessary. Heat the remaining 2 Tbs. oil in the skillet over medium-high heat until shimmering hot. Sear the pork on all three non-seam sides until well browned, about 6 minutes total. Flip onto the seam side, then transfer the skillet to the oven. Cook until an instant-read thermometer inserted into the thickest part of the roast registers 140ºF, 10 to 15 minutes.
  7. Combine the crushed pineapple, orange juice concentrate, packed brown sugar and Worcestershire sauce in a medium-size saucepan. Bring to a boil. Reduce heat and simmer, uncovered, 15 minutes or until slightly thickened. Pour over meat about 1/2 hour before meat is to finished. Finish baking.

Whether you’re looking for a new recipe to make for a Super Bowl watching party or some easy snacks to bring to the next big tailgate party, we’re here to help you create simple game day food favorites! Our Thermador Chef will be cooking delicious game day snacks in the live Thermador kitchen. Learn to make Chef David’s delicious slow cooked rib bites or Game day grillers with sausage, onions and peppers.

ribs

Slow cooked rib bites 

Ingredients:

1/3 cup flour
1 teaspoon salt
1/4 teaspoon pepper
2 1/2 lbs boneless beef short ribs
1/4 cup butter
1 cup chopped onion
1 cup beef broth
3/4 cup red wine vinegar
3/4 cup brown sugar
1/4 cup chili sauce
2 tablespoons catsup
2 tablespoons Worcestershire sauce
2 tablespoons minced garlic
1 teaspoon chili powder

Directions:

1. Put flour, salt and pepper in a bag.
2. Add ribs and shake to coat.
3. Brown ribs in butter in a lg skillet.
4. Put in slow cooker.
5. In same skillet, combine remaining ingredients.
6. Bring to a boil, stirring.
7. Pour over ribs.
8. Cover and cook on low for 9 hours.

Sweet-n-spicy wings with buffalo ranch sauce

Ingredients:

2-3 pounds Chicken wings, trimmed and wing tips removed
¼ cup Ketchup
¼ cup Soy sauce
½ cup Hot Sauce
2 tablespoons Honey
Pepper to taste

Directions:

1. In a bag (gallon size) add all of the ingredients.
2. Mix well, and marinade for couple of hours.
3. Pre-heat oven at 425°C.
4. Grease up a backing sheet and place the chicken wings in a single layer.
5. Bake for 30 to 45 minutes, turning the wings half way.
6. Towards the end turn on the oven on broil; cook the wings for few minutes.
7. Serve right away!

Game day grillers with sausage, onions and peppers

Ingredients:

6 hot or sweet Italian sausages, about 1 1/2 lb. total
2 Tbs. olive oil
2 large red onions, thinly sliced
4 long green Italian sweet peppers, seeded and cut into thin rounds
2 red bell peppers, seeded and cut lengthwise into strips 1/4 inch wide
1 orange bell pepper, seeded and cut lengthwise into strips 1/4 inch wide
2 Tbs. balsamic vinegar
4 sourdough or other sandwich rolls, split and toasted
2 Tbs. Dijon mustard

Directions:

1. Cut each sausage in half lengthwise.
2. In a large fry pan over medium heat, fry the sausages, turning once, until crisp and cooked through, 4 to 5 minutes per side.
3. Remove from the heat and keep warm while you prepare the onions and peppers.
4. Warm the oil in a fry pan over medium-high heat.
5. When the oil is hot, add the onions and cook them, scraping and turning them often with a spatula, until limp and slightly browned, 7 to 8 minutes.
6. Transfer to a bowl and keep warm.
7. Cook the green, red and orange peppers the same way until they are limp and browned on the edges, about 10 minutes.
8. Add the balsamic vinegar and deglaze the pan, stirring to dislodge any browned bits from the pan bottom, 1 to 2 minutes more.
9. To make the sandwiches, lightly spread the cut sides of the toasted rolls with the mustard.
10. Divide the onions, the pepper mixture and the sausage halves evenly among them, allowing 3 pieces of sausage for each sandwich.

Beef ribs

Texas BBQ Beef Ribs 

Ingredients:

For the rib rub
3/4 cup raw sugar, such as Sugar In The Raw
1/4 to 1/2 cup salt, depending on your tolerance for the stuff
1/4 cup paprika
2 tablespoons finely ground black pepper
1 tablespoon granulated garlic
1 tablespoon onion powder
1 tablespoon ground cumin
1 teaspoon dry mustard
1 teaspoon ground coriander
1/2 teaspoon cayenne pepper
1/2 teaspoon ground allspice
For the ribs
5 pounds beef back ribs
2 cups your favorite barbecue sauce

Directions:

For the rib rub
1. Combine all of the ingredients. Mix well and take a taste. If it needs more salt, shake some in. The rub can be stored in an airtight container for up to several weeks. Makes about 1 1/2 cups.
Prepare the ribs
2. Season the ribs liberally on both sides with some of the rib rub.
3. Prepare the grill for cooking over indirect heat at 250° F (121°C) using oak or hickory wood for flavor. Place the ribs, meaty-side up, directly on the cooking grate. Cook for 2 1/2 hours. Flip the ribs and cook for 30 more minutes.
4. Place a double layer of big sheets of heavy-duty aluminum foil next to the grill and place the ribs on it, meaty-side up. Wrap up the ribs, sealing the package tightly. Return the ribs to the grill for 1 hour.
5. Transfer the packet of ribs to a platter. Raise the temp of the grill to 400°F (204°C) . Remove the ribs from the foil and return to the cooking grate. Brush with the sauce. Cook for 15 minutes. Flip the ribs, and brush with the sauce again. Repeat once more.
6. Place the ribs on a platter and serve with additional barbecue sauce, preferably warm, on the side.

Chile Con Queso

Ingredients:

1/2 onion diced (about 1/2 cup)
4 cloves of garlic minced
3 Serrano peppers diced
3 jalapeno peppers diced
2 tablespoons of butter
2 tablespoons of flour
1 cup of milk
6 cups of shredded cheese, can use any combination of Longhorn cheddar and Monterrey Jack
1/2 cup of cilantro, chopped
2 plum tomatoes, peeled and diced (about 1 cup, can use canned if tomatoes aren’t in season)
1/2 cup of sour cream
Salt to taste

Directions:

1. Melt the butter in a saucepan on medium-low heat, and then cook the onions and peppers for about five minutes or until onions are translucent.
2. Add the garlic and cook for another minute.
3. Whisk the flour into the butter, vegetable mix and cook for about 30 seconds.
4. Add the milk to the pot, and cook on medium, whisking constantly until sauce is thick, about five minutes. Stir in the cilantro and tomatoes.
5. Turn heat down to low, and a 1/4-cup at a time, slowly add the shredded cheese stirring into the white sauce until completely melted. Repeat.
6. Stir in the sour cream.
7. Add salt to taste.

Fried Okra

Deep-Fried Pickled Okra

Ingredients:

1/2 cup Yellow cornmeal
1 teaspoon Hot pepper sauce
1/2 cup milk
1 lb Pickled okra
1/2 cup White flour
2 Eggs
Peanut oil; for frying
Original recipe makes 12

Directions:

1. Drain okra.
2. Beat eggs, milk, and hot red pepper sauce together until well blended.
3. Dredge okra in flour, dip into egg mixture, and then dredge in yellow cornmeal.
4. Put breaded okra on a baking sheet.
(Recipe can be made to this point several hours ahead.)
5.In a deep-fryer or large, heavy pot, heat about 4 inches of peanut oil to 375F. Carefully lower okra into hot oil in batches.
6. Cook until golden brown, about 2 minutes.
7. Drain on paper towels and serve warm.

 

 Sweet Potato Pie

Texas Sweet Potato Pie

Ingredients:

1 1/2 cups mashed cooked sweet potatoes or one 15 oz. can of mashed sweet potatoes
3 beaten eggs
3/4 cup brown sugar
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon cloves
1/4 teaspoon nutmeg
3/4 teaspoon salt
1 2/3 cup evaporated milk (one 12 oz. can)

Directions:

1. Preheat oven to 375 degrees
2. Combine all ingredients in a mixer or blender. (A mixer will leave a few small delectable chunks of sweet potato.)
3. Pour mixture into two nine-inch pie shells (I use my Grandma’s recipe).
4. Bake 55 minutes.
5. Cool before serving. Garnish with whipped cream as desired. Makes two pies.
Uncle Richard’s note: I really enjoy it cold out of the refrigerator the next day for breakfast.

Ginger whipped cream

Ingredients:

1 cup heavy whipping cream
2 tablespoons of honey
1 teaspoon of ground ginger

Directions:

In a chilled bowl, beat all ingredients with mixer, whisk or egg beater until soft peaks form.
