Jalapeno Peanut Brittle

Jalapeno Peanut Brittle


1 -2    jalapeno, chopped
1/3 cup water
2  cups sugar
1  cup light corn syrup
3  cups peanuts
1  teaspoon salt
2  teaspoons butter
2  teaspoons baking soda


In a glass measuring cup place jalapeno and water and microwave for 5 minutes. Let stand for 15 minutes. Drain and reserve liquid and discard jalapenos.

In a large non-stick saucepan mix sugar, jalapeno liquid and syrup, making sure to mix well. Stir over medium heat until candy thermometer reaches 240 degrees and add peanuts. Continue stirring until candy reaches 298 degrees and remove from heat and add salt, butter and baking soda, stir well.

Pour onto a well buttered non-stick baking sheet and let cool completely, break into bite-size pieces.


Shiner brazed Texas SausageShiner brazed Texas Sausage


1 lb bratwurst sausage (about 4 links)
1 large yellow onion, thinly sliced
2 cloves garlic, thinly sliced
1 bottle of Shiner beer (12 oz)
1 tbsp olive oil
1/2 tsp salt
1 tbsp brown sugar
2 tsp Worcestershire sauce



Turn on the grill outside and let it heat up.

Heat the olive oil over medium heat in a large saucepan. Once hot, add the onions and saute for about 10 minutes, until golden. Add the thinly sliced garlic and saute for another three minutes until toasty.

Add the bratwursts to the pan, along with the beer. Stir and bring to a boil. Cover, reduce heat and simmer for about 15 minutes. The bratwursts should have turned white at this point.

Remove the sausages with a slotted spoon and place on a plate. Turn the heat to high so the beer mixture boils again. Add the salt, brown sugar and Worcestershire. Stir well and continue boiling.

While the “sauce” is boiling, grill the sausages for only about 5 minutes, depending on the heat of your grill. They have cooked in the beer so you just want to finish them on the grill and get those lovely caramelized grill marks.

When done, bring the sausages back inside. At this point, your beer should have reduced down to about a quarter of a cup of liquid. Place grilled brats back in the beer sauce and spoon sauce over.


Beef Fajita Skewers Beef Fajita Skewers


1/4 cup lime juice
1 tablespoon chopped garlic
1 tablespoon hot sauce
1 tablespoon canola oil
1 tablespoon chili powder
Kosher salt
Freshly ground black pepper
2 green peppers
2 medium onions
1 1/2 pounds top round
1 cup sour cream, to serve
2 tablespoon chopped cilantro, for garnish

Special Equipment: 8 wooden or medal skewers



In a large resealable, mix together the lime juice, garlic, hot sauce, canola oil and chili powder. Season with salt and pepper to taste. Remove 1 tablespoon of the marinade and set aside.

Slice the peppers and onions into one inch square pieces. Place in the bag with the marinade. Slice the meat into thin strips against the grain and put into the bag with the marinade and vegetables and mix well to coat everything with the marinade. Place the bag in a large bowl incase it leaks and refrigerate for one and half hours.

Mix the reserved marinade with the sour cream and refrigerate.

If using wooden skewers soak in water for 30 minutes before threading on the beef and vegetables.

Remove the meat and vegetables from the refrigerator and let come to room temperature, about 30 minutes. Thread the beef and vegetables onto the skewers. Each skewer should get 4 pieces each of the pepper and onion and 3 pieces of the beef, alternating as you thread them onto the skewer. Cook the skewers on a grill pan or outdoor grill over medium high heat until meat is medium rare, about 3 to 4 minutes a side.
